Louisiana "Cajun Yam" Lore
Garber Farms Cajun Yams are grown in the heart of south Louisiana's Cajun country. The term "cajun" was originally used to describe the descendants of the Acadians, Frenchmen from Acadia or Nova Scotia who found refuge in southern Louisiana among people of their own tongue. These people settled along the sandy loam soils of the bayous. With plentiful rainfall and warm climate, they discovered an excellent environment for growing high quality sweet potatoes.
The Garber Family hand selects only the very finest of the sweet potato crop to make up the gourmet package labeled "Cajun Yams".

What is the difference????
Several decades ago when orange flesh sweet potatoes were introduced in the southern United States, producers and shippers desired to distinguish them from the more traditional white flesh types. The African word “nyami”, referring to the starchy, edible root of the Dioscorea genus of plants was adopted in its English form, “yam”. Yams in the United States are actually sweet potatoes with relatively moist texture and orange flesh. The terms are generally used interchangeably.

Creole Rose Rice Lore
Creole Rose Aromatic Rice is grown by the Garber Family on a sandy ridge located between Bayou Nezpique and Bayou Cannes in the heart of south Louisiana's Cajun Country. The gentle moist breezes from the Gulf of Mexico provide an ideal, natural environment for this elegant rice to grow and ripen.
Traditionally, rice in Cajun Louisiana was always served with a roux gravy which was seasoned to add flavor to the rice. Creole Rose Rice, however, has its own rich bodied flavor and aroma making it a treat when eaten alone or with a little butter or margarine. The flavor of Creole Rose Rice is so captivating you may never want ordinary rice again!!
